I am writing to you as you are a native Italian speaker and I hope you'll be kind enough to humour me.

Is it thinkable to interpret the line "Un mare dove non tocchi mai" as a situation where touching another person has become impossible or where it just is not done anymore?
Basically, I do not understand where the seafloor / (solid?) ground part comes from in your translation.

"Un mare dove non tocchi mai" definitely means "A sea where you can never touch the seafloor with your feet".

In the context of swimming, both in the sea and in swimming pools, the verb "toccare" without an object means that in Italian. For example "non tocco" means "I can't touch the seafloor".

Sorry for the late answer, but I hope that my answer might still be of use :)

Mahmood was really liberal with style figures and metaphors in this song (in the Sanremo winner's press conference he said that the "diamond bike" line doesn't mean a thing at all), so yeah, the seafloor line likely means what you said too.

It's not a common readymade sentence (we kinda have the opposite, "toccare il fondo" which can be translated as "hitting rock bottom"), though, so if you use "sei un mare dove non tocchi mai" in a sentence you just might sound overly poetical hahaha
